I met JP Singh when things were heating up, literally, in the kitchen. With so many dishes plated up and the explosion of colors and aroma, an interview could wait. We went for a walk in the hotel. The white arcs and purple velvet walls led us to the theme of sun kissed brunch and starry-eyed night. A twist to the menu and something of his taste; he put on quite a spread in which words of mine wouldn’t fit! Thus, the photos do all the talking. To beat the wedding qualms, he shared his thoughts on getting your banquet sorted.

The dream wedding concept…

Bigger the Better! ( He laughs) Many people will recollect a wedding because of the food. That satisfaction has to be local but also global to cater to the requirements of the guests.

Take some family members from your home who have a good taste for food. Since they have a better understanding of the guests, they can discuss with the chef to bring about harmony. An innovative chef can turn around the spread according to requirements.

A few small good things to incorporate in a wedding banquet?

The pre-plated buffet, live counters, live presentations and interactive options.

You mentioned about how guests should be content, how do you create the innovation then?

In a wedding, you should stick to the classic meal, for example, Biryan in a Muslim wedding or saadhya for a Hindu wedding. But you could incorporate other meals and take them for a culinary journey, that’s when you bring about innovation
